Cinnamon Sugar:
- 1 tablespoon ground cinnamon
- ½ cup granulated sugar
Cheesecake Bars:
- Two 8-ounce packages refrigerated crescent roll dough or sheets
- 16 ounces full-fat cream cheese, softened
- ¾ cup granulated sugar
- 1 large egg
- 1½ teaspoons vanilla extract
- 3 tablespoons unsalted butter, melted and slightly cooled
- Prepare Cinnamon Sugar: In a small bowl, mix the ground cinnamon and granulated sugar until well combined. Set this mixture aside for use in different stages of the recipe.
- Preheat and Prep Pan: Preheat your oven to 350°F (175°C) and position the oven rack in the center. Grease a 9×13-inch baking pan, then sprinkle 1 to 2 tablespoons of the cinnamon sugar mixture evenly over the bottom of the pan to add flavor to the base.
- Create Base Layer: Open one tube of crescent roll dough and carefully unroll it. Press the seams together to form one continuous rectangular sheet. Place this sheet into the prepared baking pan, making sure it covers the entire bottom evenly.
- Make Cheesecake Filling: In a mixing bowl, beat the softened cream cheese, sugar, egg, and vanilla extract together until the mixture is smooth and creamy. Pour this cheesecake filling over the base layer in the pan and spread it out evenly with a spatula.
- Top Layer and Butter Coating: Open the second tube of crescent roll dough, unroll it, and press the seams to create a single sheet. Carefully place this on top of the cheesecake filling to form a top layer. Pour the melted and slightly cooled butter over this layer, then spread it evenly using a spoon or pastry brush to ensure the cinnamon sugar will stick.
- Add Cinnamon Sugar Topping: Generously sprinkle the remaining cinnamon sugar mixture over the buttered top layer to create that signature churro flavor and crunch.
- Bake to Perfection: Place the baking pan in the preheated oven and bake for 26 to 30 minutes, or until the crescent dough is puffed and a golden brown color. Once baked, remove from the oven and transfer the pan to a wire rack to cool.
- Chill and Serve: After the bars have cooled to room temperature, refrigerate them for at least 3 hours so the cheesecake layer can set fully. Once chilled, slice into bars and serve chilled or at room temperature for a delightful treat.
Notes
- You can use homemade crescent roll dough if preferred, but refrigerated dough saves time.
- For a firmer cheesecake layer, allow chilling overnight.
- Ensure the butter is cooled slightly before pouring to prevent melting the crescent dough prematurely.
- Store leftovers covered in the refrigerator; consume within 3-4 days for best freshness.
- Optionally, dust with powdered sugar before serving for extra sweetness and decoration.
