Chipotle Sauce

Sandwich

  • 1 tablespoon olive oil
  • 2 slices sourdough bread
  • 1/4 avocado (sliced)
  • 2 ounces smoked chicken breast (sliced)
  • 3 Peppadew peppers (sliced)
  • 1 tablespoon fresh chopped cilantro
  • 1 slice Chao creamy original cheese
  • 12 tablespoons chipotle sauce (prepared above)

Instructions

  1. Prepare Chipotle Sauce: In a small bowl, combine chipotle adobo sauce, mayonnaise, lemon juice, minced garlic, and coarse salt. Stir until the mixture is smooth and well blended. Adjust the seasoning as needed to achieve your preferred level of spice and tang. Set aside.
  2. Heat Skillet and Prepare Bread: Heat a large skillet over medium-high heat. Brush the olive oil evenly on the outer sides of both slices of sourdough bread to ensure a crispy, golden crust when toasted.
  3. Assemble Sandwich in Skillet: Place one slice of bread in the skillet, oiled side down. Layer it starting with the slice of Chao creamy original cheese, then add the smoked chicken breast, sliced avocado, Peppadew peppers, and fresh chopped cilantro. Spread 1 to 2 tablespoons of the prepared chipotle sauce on the inside of the second slice of bread, then place it on top, chipotle sauce side down.
  4. Cook Sandwich: Cook the sandwich until the bottom slice is golden brown and the cheese begins to melt, approximately 3 to 4 minutes. Carefully flip the sandwich and continue cooking until the other side is toasted and the cheese is fully melted, another 3 to 4 minutes.
  5. Serve: Remove the sandwich from the skillet and let it rest for a minute. Slice it in half diagonally and serve immediately to enjoy the warm, melty, and spicy flavors.
