Instructions

  1. Season and Cook Chicken: Season the chicken breasts evenly with salt and pepper. Heat 1 tablespoon olive oil in a skillet over medium-high heat. Cook the chicken breasts for 6 to 7 minutes per side until fully cooked through (internal temperature of 165°F/74°C). Remove from heat and let rest for a few minutes before slicing thinly.
  2. Prepare the Ingredients: While the chicken cooks, slice the avocado, red onion, and tomato into thin, even slices. Arrange the cheese slices and set aside.
  3. Assemble the Sandwich: Spread mayonnaise evenly on one side of each slice of bread, then spread Dijon mustard over the mayonnaise. On two slices of the mayo-mustard side, layer sliced chicken, avocado slices, cheese, red onion, and tomato. Top each with the remaining bread slices, mayo side down, to form the sandwiches.
  4. Grill the Sandwich: Heat a clean skillet or grill pan over medium heat. Add a small amount of butter or olive oil to the pan. Place sandwiches in the skillet and cook for 3 to 4 minutes per side, pressing gently with a spatula to help compress the sandwich and encourage even melting. Grill until the bread is golden brown and the cheese has melted.
  5. Serve: Remove the sandwiches from the skillet and let them cool for about one minute. Slice each sandwich in half and serve warm for the best taste and texture.
