Ingredients

Scale

Chicken Patties

  • 1 lb ground chicken
  • 3 tbsp buffalo wing sauce
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp smoked paprika
  • ½ tsp Himalayan salt
  • ¼ tsp black pepper
  • Cooking spray or oil, for cooking

Tortillas

  • 8 small tortillas (corn or flour)

Slaw and Toppings

  • 3 cups shredded cabbage
  • ½ cup grated carrots
  • ¼ cup ranch dressing (Greek yogurt preferred)
  • 1 tbsp dill relish

Instructions

  1. Prepare the Slaw: In a bowl, combine the shredded cabbage, grated carrots, ranch dressing, and dill relish. Mix well and chill in the refrigerator while preparing the rest of the meal.
  2. Mix the Chicken Patty Ingredients: In a separate bowl, mix the ground chicken with buffalo wing sauce, garlic powder, onion powder, smoked paprika, Himalayan salt, and black pepper until just combined. Avoid over-mixing to keep the patties tender.
  3. Heat the Cooking Surface: Heat a griddle or large pan over medium-high heat and lightly coat it with cooking spray or oil to prevent sticking.
  4. Form and Smash Chicken Patties: Take loose balls of the chicken mixture and place each one onto a tortilla. Smash down the chicken balls flat using a spatula directly on the tortilla. Place the tortillas with smashed chicken onto the hot pan.
  5. Cook the Patties: Cook the smashed chicken patties for about 3–4 minutes or until they turn golden brown and are fully cooked through (internal temperature of 165°F / 74°C).
  6. Finish the Tortillas: Lower the heat, lightly oil the tortillas, and flip them so the tortilla side cooks on the pan. Cook until the tortillas reach your desired texture, either soft or crisped.
  7. Assemble the Tacos: Remove from heat and top each chicken smash burger tortilla with the chilled slaw salad. Drizzle additional Greek yogurt ranch dressing or buffalo wing sauce on top for extra flavor.
  8. Serve: Serve the tacos warm and enjoy the perfect balance of spicy, creamy, and crunchy textures.

Notes

  • You can use either corn or flour tortillas based on your preference.
  • Adjust the amount of buffalo wing sauce to control the spiciness level.
  • Using Greek yogurt in the ranch dressing adds creaminess with less fat.
  • Cook the chicken patties thoroughly to a safe internal temperature of 165°F (74°C).
  • For a crispier taco, cook the tortillas a little longer on the pan after flipping.
  • Leftover slaw can be refrigerated for up to 2 days.
