  • 2 large eggs

Instructions

  1. Mix Ingredients: Add the brownie mix, flour, melted butter, espresso powder, eggs, and softened cream cheese into a mixing bowl. Using an electric mixer, beat the mixture until it’s fully incorporated and smooth.
  2. Chill the Dough: Cover the mixture and chill in the refrigerator for about 30 minutes to 1 hour, allowing the dough to firm up and be easier to handle.
  3. Form and Coat Cookies: Once chilled, roll the dough into balls about 1 to 1½ inches in diameter. Generously roll each ball in powdered sugar to coat thoroughly.
  4. Prepare for Baking: Place the coated dough balls on a parchment-lined baking sheet, spacing them about 2 inches apart to allow room for spreading.
  5. Bake: Bake in a preheated oven at 350°F (175°C) for about 7-9 minutes. The cookies should look slightly soft and puffy with set edges but may appear a bit wet in the center; avoid overbaking for optimal gooeyness.
