Ingredients

Scale

Brownie Layer

  • 1/2 cup unsalted butter
  • 4 oz dark chocolate
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup plain flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 tsp salt

Cheesecake Layer

  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/4 cup sour cream
  • 1 tbsp plain flour
  • 1/4 cup heavy cream

Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C) to ensure it reaches the right temperature for baking both layers evenly.
  2. Make the brownie layer: Melt the unsalted butter and dark chocolate together until smooth, then allow to cool slightly. In a bowl, beat the eggs, granulated sugar, and brown sugar until combined. Mix in the melted chocolate mixture, then sift in the plain flour, unsweetened cocoa powder, and salt. Stir gently until you have a smooth batter. Pour this mixture into a greased or lined cake tin and bake for 15-20 minutes, until the edges are set but the center is still slightly soft.
  3. Prepare the cheesecake layer: In a mixing bowl, beat the softened cream cheese until smooth and creamy. Add the granulated sugar, vanilla extract, sour cream, plain flour, and heavy cream. Continue to beat until the mixture is completely smooth and free of lumps.
  4. Combine layers: Pour the cheesecake mixture evenly over the partially baked brownie layer, spreading gently to cover the surface.
  5. Bake the combined layers: Return the cake tin to the oven and bake for 30-35 minutes, or until the cheesecake layer is set and a toothpick inserted in the center comes out with moist crumbs but no wet batter.
  6. Chill: Remove the brownie cheesecake from the oven and allow it to cool to room temperature. Then chill it in the refrigerator for at least 4 hours or preferably overnight to fully set and develop rich flavors.
  7. Serve: Once chilled, cut into squares or slices and enjoy this delicious layered dessert.

Notes

  • For best results, soften the cream cheese and sour cream to room temperature before mixing to avoid lumps.
  • Use a springform pan or line your baking tin with parchment paper for easier removal.
  • If you prefer a sweeter brownie layer, adjust the sugar to taste.
  • Allow proper chilling time to ensure clean slices when cutting.
  • Store leftovers covered in the refrigerator and consume within 3-4 days.
  • You can add chocolate chips or nuts to the brownie layer for extra texture.
