Made with simple ingredients like butter, sugar, vanilla, and your choice of nuts, this homemade toffee is delightful for snacking, gifting, or as a sweet addition to desserts.

Ingredients

Scale

Toffee Base

  • 1 cup (2 sticks) unsalted butter
  • 1 cup granulated sugar
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 tablespoons water

Topping

  • 1 cup semi-sweet or milk chocolate chips
  • ½ cup chopped pecans, walnuts, or almonds

Instructions

  1. Prepare Your Pan & Ingredients: Line a 9×13-inch baking dish or baking sheet with parchment paper or a silicone mat. Measure and have all your ingredients ready to go, as the toffee-making process moves quickly.
  2. Make the Toffee Base: In a heavy-bottomed saucepan, melt the butter, sugar, salt, and water over medium heat. Stir constantly with a wooden spoon or silicone spatula. Continue cooking and stirring until the mixture reaches a deep golden brown color and hits 300°F (hard crack stage) on a candy thermometer, about 10-15 minutes. Remove from heat and stir in vanilla extract.
  3. Pour & Spread: Immediately pour the hot toffee mixture onto the prepared baking sheet. Spread it evenly with a spatula. Let it sit for 1-2 minutes to begin firming up slightly.
  4. Add the Chocolate: While the toffee is still warm, sprinkle the chocolate chips evenly over the surface. Let them sit for about 2 minutes to melt, then spread the melted chocolate evenly with a spatula.
  5. Sprinkle the Nuts: While the chocolate is warm and melted, sprinkle the chopped nuts on top. Gently press them in so they adhere well.
  6. Let It Set & Break Into Pieces: Allow the toffee to cool at room temperature for 2 hours or chill in the refrigerator for 30 minutes to speed up hardening. Once hardened, break into bite-sized pieces and enjoy.

Notes

  • Use a reliable candy thermometer to reach the hard crack stage accurately for perfect toffee texture.
  • You can substitute nuts according to preference or omit for a nut-free version.
  • Store toffee in an airtight container at room temperature for up to two weeks.
  • Be cautious while handling hot sugar mixture to avoid burns.
