Ingredients

Scale

Lasagna Roll-Ups

  • 8 lasagna noodles
  • 2 cups cooked chicken, shredded
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 egg
  • 1 teaspoon dried Italian seasoning
  • Salt and pepper to taste

Topping and Sauce

  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 2 cups marinara sauce
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it’s at the perfect temperature for baking the lasagna roll-ups.
  2. Cook Noodles: Cook the lasagna noodles according to package instructions until al dente. Drain them well and lay flat on a baking sheet to prevent sticking while you prepare the filling.
  3. Prepare Filling: In a large bowl, combine the shredded cooked chicken, ricotta cheese, half of the Parmesan cheese (1/2 cup), minced garlic, egg, dried Italian seasoning, salt, and pepper. Mix thoroughly until all ingredients are evenly incorporated.
  4. Assemble Roll-Ups: Spread a thin layer of the chicken and cheese mixture over each cooked lasagna noodle. Carefully roll each noodle tightly from one end to the other to form roll-ups.
  5. Prepare Baking Dish: Spread 1 cup of marinara sauce evenly on the bottom of a 9×13 inch baking dish to prevent sticking and add flavor.
  6. Arrange Roll-Ups: Place the lasagna roll-ups seam side down into the baking dish over the marinara base. Pour the remaining 1 cup of marinara sauce over the top of the roll-ups.
  7. Add Cheese Topping: Sprinkle the shredded mozzarella cheese evenly over the roll-ups, followed by the remaining 1/2 cup of grated Parmesan cheese.
  8. Bake Covered: Cover the baking dish with aluminum foil to allow the roll-ups to cook evenly and retain moisture. Bake in the preheated oven for 20 minutes.
  9. Bake Uncovered: Remove the foil and continue baking for an additional 10 minutes, or until the cheese on top is melted, bubbly, and golden brown.
  10. Garnish and Serve: Remove from the oven and garnish with freshly chopped parsley before serving for a pop of color and fresh flavor.

Notes

  • You can substitute shredded rotisserie chicken to save time.
  • For a spicier version, add crushed red pepper flakes to the chicken mixture.
  • Make sure to lay noodles flat after cooking to avoid sticking when rolling.
  • Covering with foil during the first stage of baking ensures the chicken filling stays moist.
  • This dish can be prepared ahead and baked just before serving.
