  • 2 tsp arrowroot powder (or cornstarch)

Instructions

  1. Make the sauce: In a measuring cup, combine the maple syrup, coconut aminos, rice vinegar, toasted sesame oil, and red pepper flakes (if using). Whisk until fully mixed. Add the arrowroot powder and whisk again until smooth and well combined.
  2. Cook the ground beef: Heat olive oil in a 10” skillet over medium-high heat until shimmering. Add the ground beef and cook, breaking it apart with a wooden spoon, until fully browned and no longer pink, about 5 minutes.
  3. Add aromatics: Add the minced garlic and grated ginger to the beef. Stir continuously and cook until fragrant, about 1 to 2 minutes.
  4. Cook the vegetables: Stir in the finely diced red bell pepper and shredded carrots. Cook until they become tender but still retain some bite, about 3 to 4 minutes.
  5. Add the sauce and simmer: Pour the prepared sauce over the beef and vegetables. Stir well to combine and let it simmer until the sauce thickens slightly, about 2 to 3 minutes. Taste and season with kosher salt and ground black pepper as needed.
  6. Add green onions: Stir in the sliced green onions just before serving to retain their fresh flavor and crunch.
