A refreshing and crisp Apple Salad with a creamy, tangy Feta Dressing that combines the sweetness of apples and dried cherries with the savory flavor of feta and Greek yogurt. This salad offers a delightful balance of textures and flavors, perfect as a light lunch or a vibrant side dish.

Ingredients

Scale

For the Salad:

  • 4 cups mixed garden greens
  • ¼ cup tart dried cherries
  • ¼ red onion, sliced thin
  • 1 Pink Lady or Honeycrisp apple, cored and sliced thin
  • ¼ cup candied walnuts or pecans

For the Dressing:

  • ½ cup plain Greek yogurt (110g)
  • ½ cup feta cheese (80g)
  • 2 tablespoons olive oil
  • 1 tablespoon fresh basil
  • 1 tablespoon red wine vinegar (adjust to taste)
  • ¼ teaspoon salt
  • ¼ teaspoon freshly ground pepper
  • 1 garlic clove

Instructions

  1. Prepare the Dressing: Place all dressing ingredients—Greek yogurt, feta cheese, olive oil, fresh basil, red wine vinegar, salt, pepper, and garlic clove—into a blender or mixing cup. Blend until the mixture is smooth and creamy. Chill the dressing in the refrigerator until ready to serve to develop the flavors.
  2. Assemble the Salad: Divide the mixed garden greens evenly onto four salad plates. Distribute the dried cherries, thinly sliced red onion, and thinly sliced apple on top of the greens. Sprinkle candied walnuts or pecans over each salad for added crunch and sweetness.
  3. Serve with Dressing: Drizzle the chilled creamy feta dressing lightly over each salad just before serving to prevent the greens from wilting. Serve immediately and enjoy the perfect balance of tart, sweet, and savory flavors.

Notes

  • You can substitute candied walnuts with pecans or regular nuts for different textures.
  • Adjust the amount of red wine vinegar in the dressing to suit your taste preference.
  • For a nuttier flavor, toast the walnuts or pecans lightly before adding to the salad.
  • This salad is best served fresh to maintain the crispness of the apples and greens.
  • To make it vegan, replace Greek yogurt and feta cheese with plant-based alternatives.
