Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Toothpicks or kitchen twine

Stuffing

  • 2 cups mixed apples, diced (Granny Smith and Honeycrisp recommended)
  • 8 oz Brie cheese, cut into small pieces
  • 1 cup baby spinach leaves
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) to prepare for baking the stuffed chicken.
  2. Prepare the Chicken: Place the chicken breasts on a cutting board and carefully cut a pocket into each breast without cutting all the way through, creating space for the stuffing.
  3. Prepare the Filling: In a bowl, combine the diced apples, Brie cheese pieces, baby spinach, salt, pepper, garlic powder, onion powder, and dried thyme. Mix thoroughly until well combined.
  4. Stuff the Chicken: Gently fill each chicken breast pocket with the apple and Brie mixture, using your fingers to evenly distribute the stuffing inside.
  5. Secure the Filling: Use toothpicks or kitchen twine to close the openings of the chicken breasts, ensuring the stuffing stays inside during cooking.
  6. Season the Chicken: Brush the outside of each stuffed chicken breast with olive oil, then season with additional salt, pepper, and dried thyme for enhanced flavor.
  7. Cook the Chicken: Place the stuffed chicken breasts in a shallow baking dish and bake in the preheated oven for 30 to 35 minutes, or until the internal temperature reaches 165°F (74°C) and the chicken is fully cooked.
  8. Rest Before Serving: Remove the chicken from the oven and let it rest for approximately 5 minutes to allow the juices to redistribute.
  9. Serve: Remove toothpicks or twine, slice the chicken to expose the savory stuffing, and serve warm.

Notes

  • Use a sharp knife to make clean pockets in the chicken breasts to prevent tearing.
  • Brie cheese melts easily, so handle the stuffed chicken gently to avoid filling leakage.
  • You can substitute baby spinach with kale or arugula for a different flavor profile.
  • Serve with a light side salad or roasted vegetables for a complete meal.
  • Ensure the chicken is cooked to an internal temperature of 165°F (74°C) for safety.
