  • 1200 ml water or vegetable stock
  • 300 grams (10.6 oz) long-grain parboiled rice
  • Salt and pepper, to taste

Instructions

  1. Step 1: Preheat your oven to 200°C (392°F).
  2. Step 2: Heat a good splash of olive oil in a medium-sized cooking pot over medium heat.
  3. Step 3: Add the minced onion and garlic, cooking until softened and fragrant.
  4. Step 4: Stir in the allspice, cloves, bay leaves, tomato paste, and grated tomato, cooking for 1-2 minutes while stirring constantly.
  5. Step 5: Pour in the water or vegetable stock, add the sugar, and season with salt and pepper. Let it cook for 5 more minutes, then turn off the heat.
  6. Step 6: In a baking dish approximately 33×22 cm (13×9 inches), add the rice and pour the tomato sauce on top, mixing gently to combine.
  7. Step 7: Bake in the preheated oven for about 30 minutes, stirring occasionally. Check the rice towards the end and add a bit more water if needed. Bake until the rice is cooked and all the liquid is absorbed.
